Beans are one of the main foods of the Brazilian table, they are found in different types, colors and sizes, they can be eaten in salads or served traditionally as everyone likes them, with rice and a super creamy broth.
I’m a true bean lover and every time I come across a light broth my heart starts beating faster, lol! Jokes aside, a good bean broth is full-bodied and full of flavor.
Almost everyone knows the step by step guide to prepare it, I will share with you how to make it perfect. Start by soaking the beans, this process helps the beans eliminate toxins that cause that gassy, uncomfortable feeling after eating. Soaking for 4 to 8 hours is sufficient.
Drain it from the water and, to cook, place it in the pressure cooker and cover it with water. Let cook for at least 30 minutes. When the corn is soft, it’s time to fill the pan using more water and adding a nice stir fry.
The secret of my stew
I like to pay close attention to this stage because it’s what will determine how tasty everything will turn out in the end. I always use finely chopped onion, garlic and skinless tomatoes. I learned this advice on tomatoes from my grandmother, I also use a bay leaf, bacon, sausage and if I really like a piece of smoked meat. I let everything boil for another 15 minutes. You will notice that the broth will be colored and less watery, but it will still not be perfect.
The trick to refine and make the broth perfect
To add more creaminess, you don’t need to add wheat flour, cassava flour or anything else. Just take a couple of ladles full of cereals and put them in a deep plate, with the help of a fork just crush everything until a puree is formed. Pour the bean puree back into the pan and cook for another 5 minutes. You’ll notice the broth thickens quickly and becomes super creamy.
