Ham with sweet potato puree

Ingredients:

  • 3kg of pork shank pieces
  • 2 glasses of dry white wine
  • 4 cloves garlic, minced
  • 1 sprig of thyme, chopped
  • Salt and black pepper to taste
  • Fry oil

Mashed potato:

  • 1 kg sweet potato pieces
  • 2 tablespoons butter
  • 1 pack of cream (200 g)
  • Salt to taste
  • Chopped parsley for sprinkling

Preparation method:

  1. Place the shank in a bowl, add the wine, garlic, thyme and season with salt and pepper.
  2. Cover and let rest for 2 hours.
  3. Meanwhile, for the puree, cook the potatoes in salted water until soft.
  4. Drain and pass through the juicer.
  5. Heat a pan over medium heat with the butter, add the mashed potatoes, the cream, season with salt and then cook, stirring until the mixture is smooth.
  6. Turn off and set aside.
  7. Drain the ham and remove excess liquid.
  8. Heat a pan with oil over medium heat and fry the ham, little by little, until golden brown.
  9. Drain on absorbent paper and transfer to a plate.
  10. Then serve the ham accompanied by the puree with a sprinkling of parsley.
