Apple pie

  • 90 g butter, cut into cubes
  • 1/4 cup ice water
  • 1 pinch of salt

Filling

  • 4 apples peeled and cut into slices
  • Juice of 1/2 lemon
  • 90 g of sugar
  • 2 tablespoons of wheat flour
  • 1 teaspoon ground cinnamon
  • Ground cinnamon and ground nutmeg to taste
  • Butter for greasing
  • Wheat flour for dusting

Preparation method

Pasta

In a large bowl, mix the wheat flour and salt. Add the cold butter and mix with your fingertips until you obtain a coarse crumb. Gradually add the ice water, mixing until you obtain a smooth mixture. Transfer the dough into a container, wrap it in cling film and refrigerate for 30 minutes. Reserve.

Filling

In a large bowl, season the sliced ​​apples with lemon juice to prevent them from browning. Add the sugar, wheat flour, cinnamon and nutmeg and mix well.

Assembly

Divide the dough into two parts. Roll out part of the dough on a floured surface until you obtain a circle large enough to cover the bottom and sides of the pan. Place the dough in the greased pan and press lightly to make it stick. Pour the apple filling over the dough in the pan. Roll out another part of the dough and cut it into strips to form a grid over the apple filling. Press the edges of the dough to seal them. Bake in a preheated oven at 200ºC for 40 minutes. Serve immediately.

Papaya mousse

ingredients

  • 1 papaya chopped papaya
  • 395 g of condensed milk
  • 1 lemon juice
  • 300 g of whey-free cream

Preparation method

Place the papaya, condensed milk and lemon juice in a blender and blend until smooth. Then add the whey-free cream and beat again to mix. Pour the mixture into individual glasses or a dessert plate. Store in the refrigerator for 2 hours. Serve immediately

Passion fruit pavé

ingredients

  • 395 g of condensed milk
  • 300 g of cream
  • 100 g of pulp passion fruit
  • 170 g of cornstarch biscuit
  • 1 cup passion fruit juice concentrate

Preparation method

In a bowl, mix the condensed milk and cream until smooth. Add the passion fruit pulp and mix well until completely incorporated. In a medium baking dish, place a thin layer of passion fruit cream on the bottom. Quickly dip the biscuits in the passion fruit juice and place them on top of the cream in the baking dish. Repeat the process, alternating layers of cream and biscuits until you get a layer of cream on top. Cover the refractory with cling film and refrigerate for 4 hours. Serve immediately.



Avocado ice cream cake

ingredients

  • 200 g of corn starch biscuit
  • 100 g of butter
  • Pulp 3 avocado dice
  • 395 g of condensed milk
  • 1/2 cup lemon juice
  • 300 g of whey-free cream
  • Grated coconut to decorate

Preparation method

Grind the cornstarch biscuits in a food processor until fine crumbs form. Transfer the farofa into a bowl and add the melted butter. Mix well until you get a wet crumb. Place the dough in a mold with a removable bottom, pressing it to compact the bottom of the mold, and place in the refrigerator for 30 minutes.

For the filling, place the avocado, condensed milk and lemon juice in a blender and blend until smooth. Then add the cream and beat again to combine. Remove the pan from the fridge, pour the avocado cream over the dough and level the surface with a spatula. Sprinkle with grated coconut and refrigerate for 4 hours. Serve immediately.

Roasted Pears with Honey and Walnuts

ingredients

  • 6 pears sown and cut in half
  • 2 tablespoons melted butter
  • 4 tablespoons of honey
  • 90 g chopped walnuts
  • 1 teaspoon ground cinnamon
  • 1 pinch of salt

Preparation method

On a baking tray, arrange the pears with the side facing up. In another bowl, mix the melted butter, honey, nuts, cinnamon and a pinch of salt. Cover the pears with the mixture and place them in a preheated oven at 180°C for 25 minutes. Serve immediately.
