From courgette tagliatelle

ingredients

  • 3 zuchinis Italian peeled and thinly sliced
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, peeled and crushed

  • Water for cooking
  • Grated Brazil nuts to serve

Preparation method

Place the courgette slices in a pan, cover them with water and cook over medium heat until they are soft. Turn off the heat, drain the water, and transfer the slices to a container of ice water for 1 minute. Discard the water and set the courgettes aside.

In a skillet, add the olive oil and place over medium heat to heat through. Add the garlic and brown it. Add the salt, black pepper, courgettes and mix well. Turn off the heat, transfer the pasta into a container and serve with grated Brazil nuts.

Courgettes stuffed with ricotta

  • 2 courgettes
  • 1 onion peeled and chopped

  • 200 g of ricotta

Preparation method

Cut the courgettes in half lengthwise. Remove the core and set aside. In a pan, add the olive oil and place over medium heat to heat. Add the onion, garlic and brown. Add the courgette core, cover the pan and cook for 5 minutes. Season with salt and pepper. Transfer the mixture into a container, add the ricotta and mix well.

Grease a baking tray with olive oil and place the courgette slices on top. Using a spoon, fill the slices with ricotta, drizzle with olive oil and place in a preheated oven at medium temperature until golden brown. Serve immediately.

Place the courgettes, oil, egg and onion in a blender and blend until you obtain a smooth mixture. Add the oatmeal, oregano, salt and black pepper and beat for another 3 minutes. Reserve.

In a pan, add the olive oil and place over medium heat to heat. Using a ladle, add a little mixture to the pan and brown both sides. Repeat the operation with all the dough and then serve.

  • 6 courgettes, peeled, cooked and cut into cubes
  • 1 tablespoon coconut oil
  • 1 1/2 cups oat flour
  • 50 g of cheese chalet
  • 2 eggs
  • Salt and ground black pepper to taste
  • Oatmeal for dusting
  • Water for cooking

Preparation method

Place the courgettes in the blender and blend until you obtain a smooth mixture. Then pour the contents into a strainer and, using a spoon, squeeze to eliminate excess liquid. Put the liquid in a blender and eliminate the pomace. Add the eggs, coconut oil, cheese and seasonings and beat to combine. Transfer the mixture into a container and, little by little, add the oat flour and mix until you obtain a smooth mixture.
