Practical mortadella cake:

Ingredients:

  • 1kg of wheat flour
  • 5 eggs
  • 500 g of vegetable fat
  • Salt to taste
  • 1 egg yolk for brushing

Filling

  • 1/2 cup (tea) olive oil
  • 1 onion chopped
  • 3 chopped tomatoes
  • 3 cups chopped mortadella
  • 1 tablespoon chopped parsley
  • Salt and black pepper to taste
  • 1 can of drained peas
  • 1/2 cup chopped green olives
  • 1 glass of cream cheese (200 g)

Preparation method:

  1. In a pan, over medium heat, heat the oil and fry the onion until golden brown.
  2. Add the tomato, mortadella, parsley, salt, pepper and brown, stirring occasionally, for 10 minutes.
  3. Remove from the heat, add the peas, olives and cream cheese. Reserve.
  4. Place the dough ingredients in a bowl and mix until you obtain a smooth mixture.
  5. Roll out with a rolling pin and, with half the dough, line a 30 cm diameter springform pan.
  6. Add the filling and cover with the rest of the dough.
  7. Brush with egg yolk and bake in a preheated medium oven for 30 minutes or until golden brown.
  8. Leave to cool, unmold and serve.
