  • 1 tambaqui fish weighing approximately 2 kg, cleaned
  • 1 kg of potatoes cut into pieces
  • 2 onions cut into rings
  • 1 pepper cut into slices
  • 5 cloves garlic, minced
  • 1 bunch chopped green chili pepper
  • 1 cup lemon juice
  • Salt to taste
  • Water for cooking

Preparation method

Divide the fish in two and then make transversal cuts. Place on a baking tray with the cut side facing down. Season with salt, garlic and lemon juice. Cover with aluminum foil and place in a preheated medium oven for 30 minutes. In a pan, cover the potatoes with water, add a little salt and cook over medium heat until soft. Remove the baked fish, arrange the potatoes around and add the onions, green chili pepper and pepper. Place back in the oven until golden brown. Serve immediately.

Cupuaçu cream

  • 1 cup ripe, cooked plantain
  • 1/2 cup tea cupuaçu pulp
  • 1/4 cup heavy cream
  • 1/4 cup sugar
  • Chopped Brazil nuts to taste

In a blender, beat the banana, the cupuaçu pulp, the cream and the sugar until you obtain a very smooth cream. Serve with chopped Brazil nuts.

  • 4 slices of ricotta
  • 40 g of tucumã
  • Salt and butter to taste

Preparation method

Heat a pan over medium heat, then sift the tapioca starch over the pan, distributing it evenly, and add a pinch of salt. Turn the dough as soon as it comes off the pan. Turn off the fire. Spread a little butter on the tapioca, add the ricotta and tucumã. Fold the tapioca in half and serve immediately.

  • 1 egg
  • Salt and ground black pepper to taste
  • Fry oil

Preparation method

In a pan, heat the olive oil over medium heat and sauté the onion and garlic until golden brown. Add the pirarucu and mix. Cook for 1 minute and transfer to a container. Wait for it to cool and then add the potato, egg and parsley. Mix until you obtain a homogeneous mass. Form the gnocchi with the dough. In a pan, heat the oil over medium heat and fry the gnocchi until golden brown. Serve immediately.

  • 1 dessert spoon of vinegar
  • Paprika, salt and olive oil to taste

Preparation method

In a container, put the fish and season with salt and lemon juice. Store in the refrigerator for 12 hours. Then remove the excess water and place the fish in a large pan. Add the tomatoes, onions and peppers. Cover with water, add a drizzle of olive oil, vinegar and paprika. Place over medium heat and boil for 20 minutes. Season with salt and add the green perfume.
