Dried meat croquette: snack to serve without difficulty

Dried meat croquette

Time: 1 hour

Ingredients:

  • 2 cups (tea) of water
  • 1 dried meat bouillon cube
  • 2 tablespoons butter or margarine
  • 1 1/2 cups cooked and juiced cassava
  • 1 teaspoon of salt
  • 2 cups (tea) of wheat flour
  • 3 eggs for breading
  • 1 cup (tea) breadcrumbs for dusting
  • Fry oil

Filling:

  • 2 cups desalted, cooked and chopped beef jerky
  • 1 cup grated mozzarella
  • Chopped green chilli to taste

Preparation method:

  1. Place the water, dried meat broth, butter, cassava and salt in a pan.
  2. Place on a low heat and as soon as it boils, add the flour all at once, stirring vigorously with a spoon until it comes away from the bottom of the pan.
  3. Transfer to a smooth surface and stir with a spatula or wooden spoon until cool.
  4. In a bowl, mix the meat, cheese and green chilies.
  5. Open a small portion of dough with your hand, add the filling and then close it hermetically, giving shape to the croquette.
  6. Dip them in the beaten eggs and breadcrumbs and fry them, little by little, in hot oil until golden.
  7. Drain on absorbent paper and serve immediately.
