Aubergines breaded in the Airfryer, a tasty side dish made almost without oil, much more practical and healthy
A breaded, golden and crunchy aubergine, very easy and quick in the Airfryer
Recipe for 2 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
AUBERGINES Ingredients:
– 1 unit of aubergines, medium
– Salt to taste
MILANESA IN AIRFRYER ingredients:
– 1/2 cup(s) of wheat flour
– 1 unit of egg diluted in a little filtered water, or enough.
– 1/2 cup(s) breadcrumbs, or enough for breading. (or panko flour) THE
– salt to taste (pinch)
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- # important tip: spraying or brushing the breaded aubergine slices with a light layer of fat ensures that they create a crispier crust, also adding another layer of flavor to the preparation. However, this technique is not mandatory and, if you prefer, the aubergines can be roasted without fat.
PREPARATION:
Eggplant):
- Wash and dry the aubergine(s).
- On a cutting board, cut them into slices of about 1 cm.
- Add the salt, mix and set aside.
Aubergines Milanese style in the Airfryer – breading:
- Preheat the Airfryer for 3-5 minutes at 180°C.
- Place the wheat flour in a shallow dish.
- Beat the eggs with a little salt and water in another shallow dish.
- Place the breadcrumbs in a third shallow plate.
- While breading, dry the aubergine slices with paper towels so that they do not absorb too much wheat flour.
- Lightly dip the slices in the wheat flour and shake off the excess.
- Then add the beaten egg(s) and drain.
- Finally, coat them in breadcrumbs and press them well so that they are well breaded.
Aubergines Milanese in Airfryer – Airfryer:
- Arrange the breaded slices in the Airfryer basket preheated to 180ºC, without overlapping them – depending on the quantity, divide them into several parts.
- Close the Airfryer drawer and bake for about 15 minutes, until golden brown.
- Remove the equipment drawer.
FINALIZATION AND ASSEMBLY:
- Reorder breaded aubergines in the Airfryer on a serving plate or, if you prefer, distribute it directly onto the plates.
