Tapioca and parmesan biscuit: a snack of liquid dough, which does not need to be shaped, super crunchy and seasoned

Recipe for 4 people.

Tapioca and parmesan biscuit ingredients (flat type):

– 1 cup(s) of tapioca gum

-80 ml of water

– Salt to taste

– 4 tablespoons of parmesan

SEASONING Ingredients (suggestion)

– 1 teaspoon(s) of turmeric (optional)

– 1/2 teaspoon(s) cumin (optional) THE

-1/2 teaspoon curry (optional) THE

– 1/2 teaspoon(s) sweet paprika (optional) THE

– dried Provence herbs to taste (optional) (or dried oregano) THE

– white pepper to taste (optional) THE

PREPARATION:

  1. Preheat the oven to 180°C.
  2. Separate the recipe ingredients and utensils.
  3. For 2 portions we recommend using a 20×30 cm baking tray.
  4. Grate the parmesan finely if you have not purchased it already grated.
  5. The secret of this snack is the seasoning: the suggested ingredients gave an excellent result, but feel free to modify it with the seasonings you prefer.

PREPARATION:

Tapioca and parmesan biscuits – Dough preparation:

  1. Mix the tapioca starch with the salt and the suggested seasonings or others of your preference.
  2. A tip is to use at least paprika and saffron (turmeric) so that the snack has a more golden color.
  3. Then add the water.
  4. Mix well, forming a very liquid mixture.

Tapioca and parmesan biscuits – Baking:

  1. Pour the liquid mixture into the pans. No need to grease.
  2. Level the dough well, distributing it evenly on the baking tray(s).
  3. Spread the grated parmesan over the top.
  4. Place in the preheated oven and level the pan on the rack so that the dough is evenly distributed and has the same thickness.
  5. Bake at 180°C for 25 minutes or until the dough is crispy.
  6. Turn off the oven and remove the tray(s).
  7. Let cool.
  8. Then break it into irregular pieces with your hands.

FINALIZATION AND ASSEMBLY:

  1. Serve the tapioca and parmesan biscuit (dish type) as a snack and accompany with pastries of your choice.
  2. Store in an airtight container or other tightly closed container to maintain crispness.
