Have you tried eating? Paulista couscous for an afternoon coffee? The recipe, which has earned it the title of heritage of São Paulo, is a stamp stamped in the state and, given its versatility, there are different versions depending on the cook. To help you prepare simple couscous at home, we have brought our version. Check it out below:
Paulista couscous
Time: 1 hour
Performance: 6 servings
Difficulty: easy
Ingredients:
- 1 tablespoon of oil
- 1 onion chopped
- 1 yellow pepper chopped
- 4 tablespoons chopped green olives
- 2 hard-boiled eggs, chopped
- 2 tablespoons of parsley
- 4 cups (tea) of water
- Salt to taste
- 3 cups (tea) cornmeal
- Olives, cherry tomatoes, hard-boiled eggs and parsley to taste to decorate
- Greasing oil
- Butter to accompany
Preparation method:
- Heat the oil in a pan and fry the onion until soft.
- Add the tomato, peppers and sauté for 5 minutes.
- Add the olives, eggs, parsley and fry for 3 minutes.
- Add the water, season with salt and bring to the boil.
- Add the flour, little at a time, mixing until you obtain a dough that no longer sticks to the pan.
- In the meantime, grease a 20cm diameter mold with oil and decorate with eggs, cherry tomatoes, olives and parsley.
- Add the dough and level it with a spoon.
- Leave to cool, unmold and serve.
- If desired, serve immediately with butter.
