Chilaquiles

Ingredients:

  • 2 cups cooked, shredded chicken
  • 4 eggs
  • Salt to taste
  • Fry oil
  • Chopped fresh coriander to garnish
  • Fresh cheese or mozzarella for serving

Sauce:

  • 5 medium tomatoes
  • 1 jalapeño pepper
  • 1 medium onion
  • 2 cloves of garlic
  • 1/2 cup chopped fresh cilantro
  • 1 cup chicken broth (tea)
  • 1 tablespoon of oil
  • Salt to taste

Preparation method:

  1. In a large pan, add the oil and wait until it heats up well.
  2. Cut the tortillas into triangles and fry them in hot oil until crispy.
  3. Drain on absorbent paper and set aside.
  4. For the sauce, add the oil and then brown the onion and garlic.
  5. Add the tomato, pepper, coriander and chicken broth.
  6. Season with salt and cook for about 10 minutes.
  7. Meanwhile, in a separate pan, lightly fry the eggs and set them aside.
  8. When the sauce is ready, dip the chicken cut into pieces.
  9. To serve immediately, place the fried tortillas on a serving platter, pour the sauce over the chicken, top with the eggs, sprinkle with fresh cilantro and cheese.
