Chilaquiles
Time: 1 hour

Difficulty: easy
Ingredients:
- 2 cups cooked, shredded chicken
- 4 eggs
- Salt to taste
- Fry oil
- Chopped fresh coriander to garnish
- Fresh cheese or mozzarella for serving
Sauce:
- 5 medium tomatoes
- 1 jalapeño pepper
- 1 medium onion
- 2 cloves of garlic
- 1/2 cup chopped fresh cilantro
- 1 cup chicken broth (tea)
- 1 tablespoon of oil
- Salt to taste
Preparation method:
- In a large pan, add the oil and wait until it heats up well.
- Cut the tortillas into triangles and fry them in hot oil until crispy.
- Drain on absorbent paper and set aside.
- For the sauce, add the oil and then brown the onion and garlic.
- Add the tomato, pepper, coriander and chicken broth.
- Season with salt and cook for about 10 minutes.
- Meanwhile, in a separate pan, lightly fry the eggs and set them aside.
- When the sauce is ready, dip the chicken cut into pieces.
- To serve immediately, place the fried tortillas on a serving platter, pour the sauce over the chicken, top with the eggs, sprinkle with fresh cilantro and cheese.
- If desired, serve with sliced avocado.
