Ingredients: Boneless chicken thighs:
– 800 g of boned chicken thighs, cleaned, skin and fat removed
– lemon to taste (juice)
– Salt to taste
– pepper to taste THE
SUPER CRISPY BREADING Ingredients (with corn flakes):
– 2 units of eggs
– whole milk without lactose to taste, to dilute the corn starch (or water)
– 1 tablespoon(s) of corn starch
– 4 tablespoons extra fine cassava flour – or enough for breading
– 4 tablespoons of corn flour – or enough for breading
– 8 tablespoons of flaked corn flour – or enough for breading
– Salt to taste
– pepper to taste THE
– oil to taste, for greasing and brushing or draining
PREPARATION:
- Start by preparing and seasoning the chicken (see preparation).
- Set aside the other ingredients and utensils for the recipe.
- In a deep bowl or plate, place the eggs. Whisk to mix. Then dissolve the cornstarch in a little water or lactose-free milk and mix it with the egg(s), whisking again. Season with a pinch of salt and set aside.
- Place the cassava, corn and flaked flour in another shallow plate or bowl and mix well. Season with salt and pepper and set aside.
- Grease the baking tray(s) with oil.
- Preheat the oven to 220°C.
PREPARATION:
Chicken – boneless thighs (this step must be done during pre-prep):
- Debone the thighs, remove the skin and visible fat.
- Cut into smaller pieces.
- Season with lemon, salt, pepper.
- Leave it to mature for about 15 minutes or while the pre-preparation is finished (item 2).
Super crispy breaded chicken – wheat-free breading:
- Dip the chicken pieces into the egg, water or milk, and cornstarch mixture and shake off the excess.
- Then, cover the corn flour, cassava and flakes and press well so that they are well breaded.
- Repeat the process with all the chicken pieces (bread twice).
- Arrange the breaded chicken pieces on the greased baking trays, without overlapping them.
Super crispy breaded chicken – baked:
- Pour a drizzle of oil on each of them, in a zigzag and with a quick movement, or use a pastry brush.
- Bake in a preheated oven at 220°C for about 25 minutes.
- After this time, open the oven, turn the chicken pieces and rotate the tray(s).
- Continue cooking for another 15-25 minutes or until golden brown.
- Turn off the oven and remove the tray(s).
- Dry with absorbent paper.
FINALIZATION AND ASSEMBLY:
- Arrange the pieces of Super crispy breaded chicken without wheat and without frying on a serving plate or, if you prefer, distribute it directly onto the plates.
- Serve with a salad of your choice or other garnishes.
