Ingredients for tropeiro beans with cabbage:
- 200 g of diced bacon
- 2 slices of sliced Calabrian sausage
- 2 tablespoons of butter
- 1 chopped onion
- 2 minced garlic cloves
- 1 bunch of sliced head cabbage
- 3 cups cooked beans (without broth)
- 2 cups of cassava flour
- 3 hard boiled eggs, chopped
- Salt, pepper and chopped parsley to taste
Method of preparation:
In a skillet over medium heat, sauté the bacon in its own fat until golden brown. Add the peppers and butter and fry for 3 minutes. Add the onion and garlic and sauté for 3 minutes. Add the cabbage and sauté until wilted. Add the beans, cassava flour, eggs, salt, pepper and parsley and cook for another 2 minutes. Then transfer to a serving dish and serve immediately.
