Spinach and Cheese Muffins

Ingredients:
- 1 bunch of washed spinach
- 3 eggs
- 1 cup of milk (tea)
- 1/2 cup oil (tea).
- 1 vegetable stock cube
- 3 cups (tea) of wheat flour
- 1 stalk of leek, sliced
- 1 tablespoon baking powder
- Salt to taste
- Oil and wheat flour for greasing and flouring
- 1 cup diced mozzarella
- Chili pepper for decoration
Preparation method:
- Cook the spinach in water for 5 minutes.
- Drain, let cool and squeeze well to eliminate all the water.
- Put it in the mixer, add the eggs, milk, oil, vegetable broth, half of the flour and blend until you get a smooth mixture.
- Transfer to a bowl, add the remaining flour, leeks, yeast, salt and mix.
- Pour into buttered and floured 7cm diameter fluted moulds and place a cube of mozzarella in each.
- Place the moulds in a large pan and place in a preheated medium oven (180ÂșC) for 20 minutes or until cooked through and lightly golden.
- Remove from the oven, let cool and remove from the mould.
- Place a chili pepper on each muffin.
- Serve then.
