Spinach and Cheese Muffins

Time: 45 minutes

Ingredients:

  • 1 bunch of washed spinach
  • 3 eggs
  • 1 cup of milk (tea)
  • 1/2 cup oil (tea).
  • 1 vegetable stock cube
  • 3 cups (tea) of wheat flour
  • 1 stalk of leek, sliced
  • 1 tablespoon baking powder
  • Salt to taste
  • Oil and wheat flour for greasing and flouring
  • 1 cup diced mozzarella
  • Chili pepper for decoration

Preparation method:

  1. Cook the spinach in water for 5 minutes.
  2. Drain, let cool and squeeze well to eliminate all the water.
  3. Put it in the mixer, add the eggs, milk, oil, vegetable broth, half of the flour and blend until you get a smooth mixture.
  4. Transfer to a bowl, add the remaining flour, leeks, yeast, salt and mix.
  5. Pour into buttered and floured 7cm diameter fluted moulds and place a cube of mozzarella in each.
  6. Place the moulds in a large pan and place in a preheated medium oven (180ÂșC) for 20 minutes or until cooked through and lightly golden.
  7. Remove from the oven, let cool and remove from the mould.
  8. Place a chili pepper on each muffin.
  9. Serve then.
