A very easy, quick and super tasty recipe for aubergines au gratin in the Airfryer, for those who love to prepare practical and nutritious dishes

Airfryer Eggplant Gratin Ingredients:
– 2 aubergines, cut in half
– 2 tomatoes, seeded, halved
– 2 cloves of garlic, peeled
– olive oil to taste
– salt to taste
– pepper to taste THE
Ingredients for the gratin:
– 40 g of mozzarella or as much as you want
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Wash the tomatoes, cut them in half lengthwise and remove the seeds.
- Peel the garlic cloves and cut them in half lengthwise.
- Grate the mozzarella on a coarse grater.
- Preheat the Airfryer to 180°C.
PREPARATION:
Eggplants and Tomatoes – Baked:
- Wash and cut the aubergines in half lengthwise.
- Using a knife, make deep diamond-shaped cuts in the pulp of the aubergines, without reaching the peel.
- Season with salt and pepper and drizzle with a generous amount of olive oil.
- Separate the pieces slightly, without dismantling the aubergines, so that the seasoning penetrates the pulp.
- In a heatproof bowl, place the tomatoes cut side up and the garlic cloves. Season with salt and pepper and drizzle with olive oil.
- Place the aubergines and the bowl with the tomatoes and garlic cloves in the Airfryer basket and roast them gradually if necessary.
- Bake at 180°C for about 15 minutes or until the aubergines and cherry tomatoes are cooked.
Eggplant gratin in the Airfryer:
- Remove the aubergines from the Airfryer and place them on a cutting board.
- Using a fork, mash the eggplant pulp.
- Still in the bowl, remove the peel from the tomatoes and crush them together with the garlic cloves until they form a rustic paste.
- Place the paste inside the aubergines and mix it with the pulp.
- Spread the grated mozzarella on top.
- Put the eggplants back in the basket and put them back in the drawer.
- Cook in the Airfryer at 180°C until the cheese is melted and golden, about 5 minutes.
FINALIZATION AND ASSEMBLY:
- Serve to grilling aubergines in the Airfryer immediately.
