cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Airfryer Eggplant Gratin Ingredients:

– 2 aubergines, cut in half

– 2 tomatoes, seeded, halved

– 2 cloves of garlic, peeled

– olive oil to taste

– salt to taste

– pepper to taste THE

Ingredients for the gratin:

– 40 g of mozzarella or as much as you want

PREPARATION:

  1. Separate the ingredients and utensils for the recipe.
  2. Wash the tomatoes, cut them in half lengthwise and remove the seeds.
  3. Peel the garlic cloves and cut them in half lengthwise.
  4. Grate the mozzarella on a coarse grater.
  5. Preheat the Airfryer to 180°C.

PREPARATION:

Eggplants and Tomatoes – Baked:

  1. Wash and cut the aubergines in half lengthwise.
  2. Using a knife, make deep diamond-shaped cuts in the pulp of the aubergines, without reaching the peel.
  3. Season with salt and pepper and drizzle with a generous amount of olive oil.
  4. Separate the pieces slightly, without dismantling the aubergines, so that the seasoning penetrates the pulp.
  5. In a heatproof bowl, place the tomatoes cut side up and the garlic cloves. Season with salt and pepper and drizzle with olive oil.
  6. Place the aubergines and the bowl with the tomatoes and garlic cloves in the Airfryer basket and roast them gradually if necessary.
  7. Bake at 180°C for about 15 minutes or until the aubergines and cherry tomatoes are cooked.

Eggplant gratin in the Airfryer:

  1. Remove the aubergines from the Airfryer and place them on a cutting board.
  2. Using a fork, mash the eggplant pulp.
  3. Still in the bowl, remove the peel from the tomatoes and crush them together with the garlic cloves until they form a rustic paste.
  4. Place the paste inside the aubergines and mix it with the pulp.
  5. Spread the grated mozzarella on top.
  6. Put the eggplants back in the basket and put them back in the drawer.
  7. Cook in the Airfryer at 180°C until the cheese is melted and golden, about 5 minutes.

FINALIZATION AND ASSEMBLY:

  1. Serve to grilling aubergines in the Airfryer immediately.
