Creamy Spring Roll with Shrimp

Ingredients:

  • 12 rectangles of spring roll pastry
  • Oil for frying

Filling

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 teaspoon tomato paste
  • 400 g of cleaned shrimps
  • Salt, pepper and chopped chives to taste
  • 1 teaspoon wheat flour
  • 1/2 cup (tea) of cream cheese type Catupiry®
  • 1/2 cup (tea) water
  • 3 tablespoons of wheat flour

Sauce

  • 4 tablespoons tomato paste
  • 2 tablespoons sugar
  • 1/3 cup white wine, rice or apple cider vinegar
  • 1/3 cup soy sauce (shoyu)
  • 1 teaspoon cornstarch
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil

Preparation method:

  1. For the filling, heat the oil in a pan over medium heat and sauté the onion for 2 minutes.
  2. Add the tomato paste, sauté for 2 minutes, add the shrimp and sauté for 4 minutes.
  3. Season with salt, pepper and chives.
  4. Sprinkle with wheat flour and mix until thickened.
  5. Let it cool and mix the Catupiry®. Book.
  6. Mix all the sauce ingredients in a pan until the cornstarch has completely dissolved.
  7. Cook over low heat, stirring constantly, until thickened. Let it cool.
  8. Roll out the dough on a surface and spread the filling on top.
  9. Mix the water with the flour until it dissolves and use a pastry brush to coat the entire side of the dough to seal it and prevent the filling from leaking out.
  10. Fold the ends inward and roll them up like a jelly roll.
  11. Fry, a few at a time, in boiling oil until golden brown.
  12. Drain them on absorbent paper and serve with the sauce.
