Meat ingredients for the croquette:
– 300 g of rump, without excess fat, in large cubes (or chuck)
– 1 clove(s) garlic, minced
– 1/4 large onion(s), chopped.
– 1 unit(s) of tomato(s), ripe, chopped.
– bay leaves to taste
– parsley to taste, chopped.
– green onion to taste, chopped
– 1 1/2 teaspoon salt or as much as you like
– 1/2 teaspoon(s) of pepper THE
Ingredients PASTA – Healthy meat nuggets without wheat and without dairy:
– 200 ml of cooking broth (meat) (see preparation instructions, add more if necessary)
– 1 tablespoon clarified butter (or other butter of choice)
– 1 unit of egg/s – only yolk/s
– 75ml almond milk – add more if needed
– 1/2 cup(s) gluten-free flour mix (add little by little and top up if necessary)
– salt to taste
– pepper to taste THE
Ingredients FOR THE BREADING:
– extra fine cassava flour to taste

– pepper sauce to taste (or any other sauce of your choice)

– oil to taste
PREPARATION:
- Separate the ingredients and utensils of the recipe. The amount of gluten-free flour mix may vary based on the liquid absorption capacity of the chosen mix and the percentage of xanthan gum.
- This recipe yields 30 15g units for every 2 servings.
- Important tip: this recipe is more practical if divided into 2 days – on the first day cook the meat, set aside the broth and mince it; on the second day prepare the dough and croquettes.
- Put a kettle of water on to boil.
- Remove excess fat and cut the meat into large cubes. Season with salt and pepper.
- Chop the onion, mince the garlic and tomato.
- Clean, chop and dry the parsley and spring onion.
PREPARATION:
Meat – Cooking:
- Heat a pressure cooker, add the oil and the diced meat, without overlapping them.
- Seal the meat, browning it on all sides. Repeat until all the meat is used up.
- Remove the cubes from the pan and set them aside in a separate dish.
- Lower the heat, add the chopped onion and sauté until it becomes transparent.
- Add the minced garlic, stir for 1 minute, then add the chopped tomato.
- Return the meat to the pan, add boiling water (enough to cover) and the bay leaf.
- Raise the heat, cover the pan and cook for 25 minutes after coming up to pressure.
HEALTHY MEAT CROCETTA WITHOUT GRAIN AND WITHOUT FRYING – Meat – Mince and Separate the Broth
- Once cooked, remove the pressure and open the pan. Check that the meat is tender and mince it.
- Remove the bay leaves, filter the broth and measure the necessary quantity.
- Mince the meat using a fork, a food processor, or a food processor fitted with a paddle attachment. Book.
HEALTHY MEAT CROCHET – Dough preparation:
- In the same pan add the reserved meat broth, the vegetable milk and the clarified butter.
- Heat over low heat until the butter melts and mix well.
- Add the shredded meat, chopped parsley and chives and mix again.
- Gradually add the gluten-free flour mix and the egg yolk, alternating, until you obtain a smooth, pasty dough.
- Continue stirring until the dough comes away from the bottom of the pan.
- Adjust seasonings (salt and pepper) as needed.
- Remove from the heat and let the dough cool to room temperature, covered with cling film.
MEAT CROCHETTE WITHOUT WHEAT AND MILK/LACTOSE – Sandwich and Bread:
- Spread the kibble into 15g portions, or use ¾ tablespoon for even portions.
- Dip the croquettes in the cassava flour and continue cooking, or freeze the units separately, if desired.
MEAT CROSS WITHOUT WHEAT AND MILK/LACTOSE – Roll and Bread: – Cook:
- If you use frozen croquettes, remove them from the freezer and without defrosting them, follow the steps below.
- Brush the croquettes with a drizzle of oil.
- Arrange them next to each other on the baking tray.
- Bake in a preheated oven at 220°C for 10 minutes, or until golden brown (frozen croquettes will take longer to bake, about 20 minutes)
- Turn halfway if necessary.
- Before serving, dry lightly with paper towels.
FINALIZATION AND ASSEMBLY:
- Serve Healthy meat croquettes without wheat/gluten and without frying as an appetizer or as a side dish.
- Serve with pepper sauce or any other sauce of your choice.
