Stuffed fried aubergines:
Time: 40 minutes (+20 minutes soaking)
Performance: 6 servings

Ingredients:
- 6 slices of aubergines 2 fingers thick
- 2 cups (tea) of water
- 3 tablespoons of vinegar
- 3 beaten eggs
- Salt to taste
- Breadcrumbs for coating
- Oil for frying
Filling
- 2 cans of solid tuna, drained
- 1 tablespoon grated onion
- 1 clove of garlic, minced
- Salt, black pepper and chopped green chili pepper
Preparation method:
- Soak the aubergines in water mixed with vinegar for 20 minutes.
- Drain and dry with paper towels.
- Cut the slice in half lengthwise without separating the parts.
- For the filling, mix all the ingredients and set aside.
- Carefully stuff the aubergines and close with toothpicks.
- Dip them in beaten eggs seasoned with salt and coat them in breadcrumbs.
- Fry in hot oil until golden brown.
- Drain on absorbent paper and serve.
