Stuffed Potato Gratin

Ingredients:

  • 4 large potatoes washed and dried

Filling

  • 2 tablespoons of cream
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon butter
  • 2 tablespoons grated mozzarella
  • 2 tablespoons of chopped salami
  • Salt and black pepper to taste
  • 1 tablespoon chopped parsley
Coverage
  • 1 egg lightly beaten
  • 4 tablespoons grated parmesan cheese

Preparation method:

  1. Wrap the potatoes, one by one, in aluminum foil and bake in a preheated medium oven for 20 minutes or until soft, but not mushy.
  2. Remove from the oven, unwrap, cut in half lengthwise and, using a spoon, make a hole in the potato so that it looks like a boat.
  3. In a bowl, mix the pulp removed from the potatoes with the cream, parmesan, butter, mozzarella, salami, salt, pepper and parsley.
  4. Place the stuffed potatoes in a baking dish, brush them with the beaten egg and sprinkle with the parmesan.
  5. Bake in a preheated medium oven for 10 minutes or until lightly browned. Serve then.
