Cartola – sweet banana and cheese from Pernambucano, prepared in the airfryer. An easy, fast and fried regional dessert
The famous Pernambuco dessert top hat, made with banana and coalho cheese/butter, without frying, quickly prepared in the airfryer

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
TOP TOP IN AIRFRYER Ingredients:
– 2 pieces of ripe silver bananas
– 4 slice(s) of coalho cheese (or butter cheese)
– 1 tablespoon(s) unsalted butter, melted
Ingredients TO COMPLETE:
– sugar to taste
– cinnamon powder to taste THE
PREPARATION:
- Separate the ingredients and utensils.
- Cut the ricotta or butter into slices of about 3 mm.
- In a bowl, mix the sugar and cinnamon.
PREPARATION:
Airfryer Top Hat:
- Preheat the Airfryer to 180°C.
- Place the butter in the silicone or refractory mold and put it in the microwave to melt (about 20 seconds).
- Peel the bananas and cut them lengthwise.
- Spread a little butter on the bananas and grease the pan with the rest.
- Place the bananas in the pan with the cut side facing up.
- Place the pan into the Airfryer basket and bake for about 5-6 minutes until the bananas are cooked.
- Remove the basket from the Airfryer. Increase the temperature to 200°C, arrange the ricotta or butter cheese slices on top of the bananas and return them to the airfryer for another 3-4 minutes, until the cheese is golden brown.
FINALIZATION AND ASSEMBLY:
- Serve to dessert with top hat immediately.
- Sprinkle sugar and cinnamon on top and enjoy!
