A very light, refreshing and healthy Arab cucumber salad with yogurt

cup = 240 ml, tablespoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients CUCUMBER SALAD WITH YOGURT
– 1 large Japanese cucumber, peeled, sliced (or cucumber)
– 1 cup(s) of natural yogurt
– 1 tablespoon extra virgin olive oil
– mint to taste
– salt to taste
Ingredients TO ACCOMPANY (OPTIONAL):
– green leaves to taste (optional)
PREPARATION:
- The quantity of ingredients indicated is to be served as a side dish or appetizer. If you want it as a main dish, increase the quantities to taste and serve with green leaves (suggestion).
- Wash, dry and peel the cucumber(s). Using a mandolin or knife, cut into thin slices.
- Place the cucumber slices in a colander over a bowl, season with salt and leave to dehydrate for about 15 minutes.
- Set aside the other ingredients and utensils for the recipe.
- Wash and dry the mint leaves and set them aside on absorbent paper. Chop or cut the mint leaves into thin strips only when ready to use.
PREPARATION:
Cucumber Salad with Yogurt:
- When serving, chop or cut the mint leaves into thin strips.
- Taste the cucumber, if it is salty wash it with filtered water.
- Press the cucumber slices against the strainer with the back of a spoon to remove excess liquid.
- Dry the bowl and add the cucumber slices.
- Add the yogurt and mix.
- Add the mint (chopped or cut into strips).
- Mix well, check the salt and adjust if necessary.
FINALIZATION AND ASSEMBLY:
- Serve Arabian Cucumber Salad with Yogurt as a side dish or appetizer. If you prefer, increase the quantities and serve with green leaves of your choice.
