Sweet and sour chicken pancakes with a touch of almonds and raisins

It’s not yet time to think about recipes for Christmas dinner. However, with this method of preparation the sweet and sour chicken pancakesRaisin season is officially open on the menu!




Jokes aside, it is the raisins and almonds that give a touch of special flavor to this dish. With a light dough, sweet and sour filling and creamy sauce, there’s no one who can resist these pancakes! Check out the recipe below:

Sweet and sour chicken pancakes

Time: 1h (+30min in the fridge)

Performance: 6 servings

Difficulty: easy

Ingredients:

  • 2 eggs
  • 2 tablespoons melted butter
  • 1 cup and 1/2 cup (tea) milk
  • 1 teaspoon of salt
  • 6 tablespoons of wheat flour
  • Butter for greasing

Filling

  • 1 tablespoon butter
  • 1 small onion diced
  • 1 1/2 cups cooked, shredded chicken
  • 4 tablespoons seedless white raisins
  • 4 tablespoons seedless black raisins
  • 5 tablespoons cream cheese
  • Salt, black pepper and chopped parsley to taste
  • 4 tablespoons toasted flaked almonds

Sauce

  • 2 tablespoons butter
  • 1 tablespoon wheat flour
  • 1 cup milk (tea)
  • 1 can of cream
  • Salt, black pepper and grated nutmeg to taste
  • 1/2 cup grated mozzarella
  • 4 tablespoons grated parmesan

Preparation method:

  1. Blend the eggs, butter, milk, salt and flour in a blender until smooth.
  2. Store in the refrigerator for 30 minutes.
  3. Melt the butter in a pan and sauté the onion for 2 minutes.
  4. Add the chicken, raisins, cream cheese, salt and pepper to taste.
  5. Remove from the heat, add the parsley and almonds.
  6. Melt the butter in a pan and sprinkle the flour.
  7. Fry for 1 minute and gradually pour in the milk, stirring until it thickens.
  8. Add the cream, salt, pepper, nutmeg and mix.
  9. Heat a pan greased with butter and pour 1/2 medium ladle of the mixture.
  10. Rotate to distribute evenly and brown on both sides.
  11. Arrange on a plate and spread the filling on one end.
  12. Roll up like a jelly roll and place in a large baking dish.
  13. Drizzle with sauce, sprinkle with cheese and bake in a preheated medium oven for 20 minutes or until golden brown. Serve.
