Grilled salmon with vegetables
Time: 30 minutes

Ingredients:
- 1 crushed garlic clove
- Juice and zest of 1 lemon
- Salt and black pepper to taste
- 1 cup cassava slices
- 1 Italian courgette, sliced
- 4 tablespoons of olive oil
- 1 cup cherry tomatoes (cut in half)
- 2 tablespoons chopped parsley
Preparation method:
- Season the fish with garlic, juice, zest, salt and pepper to taste.
- Steam the carrot for 4 minutes.
- Add the cassava and courgettes, cook for 4 minutes, turn off and set aside.
- In the meantime, heat a pan over a high heat with half the oil and brown the fish for 3 minutes on each side.
- Heat a large skillet with the remaining oil over medium heat and add the cooked vegetables.
- Brown for 1 minute, add the tomato, salt, pepper and then pour into a plate with the fish.
- Sprinkle with parsley and serve immediately.
