Grilled salmon with vegetables

Ingredients:

  • 1 crushed garlic clove
  • Juice and zest of 1 lemon
  • Salt and black pepper to taste
  • 1 cup cassava slices
  • 1 Italian courgette, sliced
  • 4 tablespoons of olive oil
  • 1 cup cherry tomatoes (cut in half)
  • 2 tablespoons chopped parsley

Preparation method:

  1. Season the fish with garlic, juice, zest, salt and pepper to taste.
  2. Steam the carrot for 4 minutes.
  3. Add the cassava and courgettes, cook for 4 minutes, turn off and set aside.
  4. In the meantime, heat a pan over a high heat with half the oil and brown the fish for 3 minutes on each side.
  5. Heat a large skillet with the remaining oil over medium heat and add the cooked vegetables.
  6. Brown for 1 minute, add the tomato, salt, pepper and then pour into a plate with the fish.
