Cassava cake without flour and without frying: a crunchy crust and the flavor of cheese inside, delicious
Make a delicious cassava cake in the Airfryer, flourless and very easy to prepare – the perfect option for a snack or side dish

Ingredients for cassava dumplings:
– 300 g of cassava/cassava/cassava
– 1 tablespoon unsalted butter
– 1 tablespoon of grated parmesan
– salt to taste
– 45 g mozzarella, grated
Ingredients FOR GREASING/BRUSHING:
– oil to taste
PREPARATION:
- The recipe for 2 portions yields 6 gnocchi of approximately 50 g each. If you prefer to serve gnocchi as a snack, make them in smaller sizes.
- Separate the ingredients and utensils for the recipe.
- Start by cooking the cassava so that it can cool (see preparation).
- While the cassava cooks and cools, grate the mozzarella or cut it into cubes, to make it easier to shape the gnocchi.
- Grate the parmesan, if you didn’t buy it already grated.
PREPARATION:
Cassava – Cooking (do this step before starting pre-preparation):
- Peel and wash the peeled cassava and cut it into smaller pieces.
- Place in a pan and cover with water – 3 fingers above the height of the cassava.
- Add the salt, cover the pan and place it on a high heat.
- When it boils, reduce the heat to medium and cook for about 20 minutes, this time may vary depending on the quality of the cassava.
- When the cassava is cooked, drain it with the help of a sieve, eliminating the large thread found in the center.
- Transfer it to a bowl and mash it with a fork until it has the consistency of a puree.
- Let it cool.
Cassava Dumplings – Modeling:
- Preheat the Airfryer to 180°C.
- When the cassava is cold, add the butter and parmesan, mix well and check the salt.
- Knead with your hands until you obtain a very smooth and homogeneous dough.
- Divide the dough into 50g or smaller portions, depending on the desired size.
- Grease your hands with a drizzle of oil, take a part of the dough, make a ball and flatten it in the palm of your hand.
- Place the grated or diced mozzarella in the center of the disc and close it hermetically so that the cheese is well covered and does not come out during cooking.
- Form a cupcake.
- Repeat the process until all the dough is used up.
- Brush or drizzle the gnocchi with a drizzle of oil to create a crunchy crust.
Cassava Ravioli – Cook in the Airfryer:
- Place the cassava ravioli in the Airfryer basket, leaving space between them to allow air to circulate.
- Insert the basket into the preheated drawer of the Airfryer, without overlapping: depending on the quantity of ravioli and the size of your equipment, cook them in several stages.
- Close the drawer and bake at 180°C for about 20 minutes or until they are lightly golden: the cooking time depends on the size of the cupcakes and the power of your equipment.
- When they are golden and crispy, remove the equipment drawer.
FINALIZATION AND ASSEMBLY:
- Reorder cassava gnocchi prepared in the Airfryer on a serving dish and served as a side dish or snack.
