Meatloaf with aubergines

Ingredients:
- 2 tablespoons of olive oil
- 1 grated carrot
- Salt, black pepper and chopped green chilli to taste
- 1.2 kg of minced meat
- 1 egg
- 3 tablespoons of breadcrumbs
- Olive oil for greasing and brushing
- 1 cup shredded mozzarella
- 1 cup (tea) of Catupiry®
Preparation method:
- Heat a pan with olive oil over medium heat and fry the onion until softened.
- Add carrot, salt, pepper, green chillies and sauté for 2 minutes.
- Transfer it to a bowl, let it cool and mix it with the meat, egg, breadcrumbs and salt until you obtain a smooth mixture.
- In a greased medium English cake pan, arrange some of the aubergine slices, covering the entire pan.
- Spread half the meat on top and spread the cheese and Catupiry® on top.
- Cover with the remaining meat and the remaining aubergine slices.
- Brush with olive oil and bake in a preheated medium oven for 35 minutes or until golden brown.
- Unmold and serve.
