“What I feared happened: I had to admit that it was not fake news. The banana on the counter ripened more slowly than the banana in the fruit basket,” he said.

But after all, why does a hanging banana take longer to ripen?

According to food engineer Augusto Ichisato, the problem lies in air circulation.

“The more air circulates through the banana, the more ethylene is lost and the slower it ripens. Bagging it would increase exposure to this gas naturally produced by the banana, and speed up ripening,” he explains.

“The banana will not give different results due to its position, but rather due to the circulation of air. To demonstrate this, simply place a bunch of bananas, hanging, but wrapped…. In this case they will ripen much longer than the fruit bowl and much more than simply open,” he adds.
