  1. With the quantities indicated above (2 portions) you will obtain 6 pancakes of approximately 10 cm in diameter.

  1. Mash the ripe bananas in a shallow dish with a fork until they become a smooth puree.
  2. Add the eggs to the mashed bananas and beat until the mixture is well integrated and bubbly.
  3. Heat a non-stick pan over a very low heat and lightly grease it with oil to prevent sticking.
  4. Place small portions of dough in the pan, forming pancakes about 10 cm in diameter.
  5. Cook (still over very low heat) for 1 to 2 minutes, until the edges are firm and the center is cooked through.
