Vegetable pie light

Ingredients:

  • 1 cup (tea) skimmed milk
  • 1 jar of low-fat natural yogurt (200 ml)
  • 1/4 cup oil (tea).
  • 2 cups (tea) of wheat flour
  • 2 eggs
  • 1/2 cup crumbled ricotta
  • 1 medium carrot, grated
  • 1 can of drained peas
  • 4 tablespoons chopped red chili pepper
  • 1 teaspoon of yeast
  • Oil and wheat flour for greasing

Preparation method:

  1. In a blender, beat the milk, yogurt, oil, flour, eggs, salt, pepper and ricotta until smooth.
  2. Pour into a bowl, add the carrot, peas, pepper and yeast and mix with a spoon.
  3. Pour into a greased and floured medium baking pan and bake in a preheated medium oven for 35 minutes or until golden brown.
  4. Remove from the mold once warm and serve in slices. If desired, garnish with cherry tomatoes and parsley leaves.
