Ingredients for cucumber and avocado salad:

– 1 Japanese cucumber, finely sliced

– 1 unit of avocado, ripe and cut into cubes

– 1/4 piece(s) of red onion, finely sliced

– 1 stalk(s) of celery, chopped

– 1/2 teaspoon grated ginger to taste (or as much as you like)

– 1 tablespoon chopped parsley (or mint)

– salt to taste (pinch)

Cucumber Avocado Salad Dressing Ingredients:

– 2 and 1/2 tablespoons of extra virgin olive oil

– 3/4 unit of lemon (juice)

– 2 teaspoons of wasabi sauce (with mayonnaise)

– wasabi paste to taste – if you don’t have wasabi sauce (optional) THE

Ingredients TO COMPLETE:

– toasted sesame oil to taste (or extra virgin olive oil)

– iceberg lettuce to taste (or romaine lettuce)

– salt to taste

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. The suggestion is to use wasabi sauce, which is, in fact, a wasabi paste mixed with mayonnaise. If you only have concentrated wasabi paste, add a small initial amount and adjust to your preferences.
  3. Cut the onion into slices and soak it in cold water. Therefore, drain it well before using it to avoid excess humidity.
  4. Wash the cucumber and celery well.
  5. Cut the cucumber (without peeling it), remove some seeds and then cut it into thin slices. Chop the celery into cubes.
  6. Peel and grate the ginger.
  7. Wash well, dry and chop the parsley or mint leaves.
  8. Wash the green lettuce leaves well and soak them in sodium hypochlorite (1 tablespoon for each liter of water). Then dry them completely with absorbent paper or with a salad spinner.
  9. Finally, cut the avocado into cubes and add a few drops of lemon to prevent it from blackening.

PREPARATION:

  1. In a bowl, add the sliced ​​cucumber, diced avocado, sliced ​​and drained red onion, chopped celery and grated ginger. Sprinkle with a pinch of salt.
  2. In another bowl or pot with a lid, mix the extra virgin olive oil, wasabi sauce or a small amount of wasabi paste (optional), lemon juice, salt and black pepper flakes. Shake the pot or stir well until emulsified.
  3. Drizzle the salad with the dressing a little at a time, mixing gently. Adjust the amount of salad dressing to your preference.

FINALIZATION AND ASSEMBLY:

  1. For presentation, you can arrange lettuce leaves around the salad or use them as “beds” to place the cucumber and avocado salad inside. Remember to sprinkle a little salt on the leaves to enhance the flavor.
  2. Serve to cucumber and avocado salad on a plate or individual plates.
  3. Top with toasted sesame oil or olive oil and sprinkle with red pepper flakes to taste.
