CHEESE CAKE Ingredients
– 4 units of eggs
– 400 ml of coconut milk
– 2 tablespoons coconut oil + a little for greasing (or other oil of your choice)
– 2 cups demerara sugar
– 100 g of lactose-free Parmigiano Reggiano
– 100 g of dry grated coconut
– 1/2 cup(s) corn starch
– 1/2 cup(s) potato starch
– 1 tablespoon(s) of chemical yeast B
PREPARATION:
- Separate all ingredients and utensils for the recipe.
- Grease a 20cm square baking pan with coconut oil or another oil of your choice (this size is for 1 standard recipe – 4 people).
- Preheat the oven to 180°C.

Queijadinha cake:
- In a blender, whisk the eggs, coconut milk, coconut oil (or oil of your choice), and demerara sugar.
- Then add the grated lactose-free cheese, the grated coconut, the potato starch and the corn starch. Beat everything for 1 minute, to mix the added ingredients well.
- Without beating, add the yeast and mix well with a spatula.
- Transfer the dough into the already greased pan: fill the pan to the height, leaving 1 centimeter of space so that the cake can rise in the oven.
- Bake in the preheated oven at 180°C and bake for about 40 minutes or until the cake is golden and firm on the surface, but still moist inside when touched with a fork – #advice: do not overcook so that the cake retains its cheesecake texture on top
- Remove from the oven and leave to cool.
FINALIZATION AND ASSEMBLY:
- Cut the cheesecake into squares for serving. Note the “cheese will be on top” part.
- Store at room temperature for up to 3 days.
