The Bauru sandwich, an icon of São Paulo cuisine, has just received an even more special title: intangible cultural heritage of the city of Bauru. The decision, published in the Official Journal of the Municipality, guarantees the protection of the original recipe of the snack that has conquered palates throughout Brazil.
The history of the snack began with a man from Bauru in São Paulo (SP), in the 1930s, the radio presenter Casemiro Pinto Neto, known by his friends as Bauru, first ordered the snack at the famous Ponto Chic, in São . Paulo and the recipe didn’t include pickles. He suggested making a different sandwich with open-faced, crumb-free French bread and stuffed with melted cheese, roast beef and tomato.
It later took the name bauru and quickly spread throughout the city, becoming the flagship of Ponto Chic’s menu.
The pickle wasn’t added until much later, in 1950, when the sandwich had already become popular in the city. In the 1990s the city of Bauru made the original recipe of the sandwich official with Municipal Law 4314, sanctioned in 1998, which registered the bauru as a typical product of the city.
The original income considered net worth is obtained with:
French bread, without the crumb in the top half;
Slices of salted roast beef;
Sliced tomatoes, with oregano;
Yellow cheese dissolved in water;
Pickles.
Since 2018, the bauru has been considered an intangible cultural heritage of the state of São Paulo and was listed as a Bauru heritage in the city’s Official Gazette on October 31.
This official registration ensures that, even with variations in the ingredients, the original recipe remains preserved. Additionally, the Bauru City Tourism Council (Comtur) and the Economic Development Secretariat (Sedecon) issue a certificate certifying that a particular business or event prepares the snack following the original recipe.
