An easy to prepare bruschetta, without cooking, for a fresh and sophisticated appetizer with bread crust, concassé cherry tomatoes and basil

Tomato and Basil Bruschetta Ingredients:
– 4 slices of toasted French bread (or half, if you choose a baguette)

– 8 medium tomatoes, peeled and seeds removed, cut into cubes (concassé tomatoes – see preparation)
– 2 small garlic cloves, peeled
– basil to taste (leaves) cut into thin strips + leaves to decorate
– 4 tablespoons of extra virgin olive oil or olive oil flavored with rosemary and thyme (see pre-preparation)
– fresh rosemary to taste (branch) (optional)
– thyme to taste (branch) (optional)
– 1 teaspoon of balsamic vinegar
– salt to taste
– pepper to taste
Ingredients TO ACCOMPANY:
– parmesan flakes to taste (piece) (optional)
PREPARATION:
- Prepare the concassé tomato (see preparation).
- Season the oil (optional): in a pan, heat the oil with the sprig of thyme or rosemary for 2-3 minutes over low heat. Remove from heat and allow to cool, discarding the herb bundle after infusion.
- Set aside the other ingredients and utensils for the recipe.
- Preheat the oven to 200°C to toast the bread.
PREPARATION:
Concassè Tomato:
- Make an “X” cut at the base of the tomatoes.
- Immerse them in boiling water for 15-20 seconds and immediately transfer to an ice bath.
- Remove the skin and, using a knife, cut it in half to remove the seeds.
- Cut the pulp into cubes and transfer to a medium bowl.
- Season with salt and pepper, place in a colander and leave to drain for 15 minutes.
- Return to pre-preparation (step 2).
Bread:
- Cut the bread into 1.5 cm thick slices.
- Rub the garlic clove on one side of each slice of bread, imparting a light flavor.
- If desired, apply a light coating of olive oil to the slices to enhance the texture.
- Place the bread in a shallow pan and brown for 5-10 minutes, until crisp and golden.
Tomato and basil bruschetta:
- Wash the basil well and cut it into slices, if you want to keep some leaves for decoration.
- Then season the drained tomato concassé with flavored or extra virgin olive oil, balsamic vinegar and sliced basil leaves.
- Adjust seasonings as needed.
- Shape the parmesan (optional) using a slicer or mandolin.
Assembling the Bruschetta:
- Place a generous portion of the tomato mixture on each slice of bread.
- Accompany with thin flakes of parmesan to decorate.
- Another option is to take the tomato with toasted bread and parmesan flakes to assemble it when serving.
FINALIZATION AND ASSEMBLY:
- Serve bruschetta with tomato and basil immediately to preserve the freshness and crunchy texture of the bread.
- Decorate with basil leaves. Accompany with parmesan flakes (optional).
