Strips with garlic cream

Ingredients:

  • 3 tablespoons of oil
  • 1kg of ducklings cut into strips
  • Salt and black pepper to taste
  • 2 onions cut into strips
  • 2 cups (tea) of water
  • Chopped chives for sprinkling

Sauce:

  • 2 cloves of garlic
  • 1 cooked egg yolk
  • 2 tablespoons chopped parsley
  • 1/2 cup cold milk
  • 1/2 cup oil (tea) (approximately)

Preparation method:

  1. For the sauce, place the garlic, egg yolk and milk in a blender.
  2. Turn the heat on and add the oil slowly, whisking constantly, until you obtain a cream, add more oil if necessary.
  3. Season with salt, transfer to a gravy boat and keep in the refrigerator until ready to serve.
  4. Heat a pressure cooker with oil over high heat and fry the duckling seasoned with salt and pepper and the onion until golden.
  5. Add the beef broth and water, cover and cook for 15 minutes on low heat from when the pressure started.
  6. Turn off and let the pressure release.
  7. Open the pan, transfer the meat to a serving plate, sprinkle with chives and serve with the garlic sauce.
