Strips with garlic cream
Time: 45 minutes

Ingredients:
- 3 tablespoons of oil
- 1kg of ducklings cut into strips
- Salt and black pepper to taste
- 2 onions cut into strips
- 2 cups (tea) of water
- Chopped chives for sprinkling
Sauce:
- 2 cloves of garlic
- 1 cooked egg yolk
- 2 tablespoons chopped parsley
- 1/2 cup cold milk
- 1/2 cup oil (tea) (approximately)
Preparation method:
- For the sauce, place the garlic, egg yolk and milk in a blender.
- Turn the heat on and add the oil slowly, whisking constantly, until you obtain a cream, add more oil if necessary.
- Season with salt, transfer to a gravy boat and keep in the refrigerator until ready to serve.
- Heat a pressure cooker with oil over high heat and fry the duckling seasoned with salt and pepper and the onion until golden.
- Add the beef broth and water, cover and cook for 15 minutes on low heat from when the pressure started.
- Turn off and let the pressure release.
- Open the pan, transfer the meat to a serving plate, sprinkle with chives and serve with the garlic sauce.
