CHRISTMAS CAKE DOUGH Ingredients (dry ingredients):
– 1 1/2 cups (tea) of wheat flour. sifted + a little to sprinkle the mold
– 3/4 teaspoon(s) of salt, sifted
– 1 1/2 teaspoon(s) of ground cinnamon
– nutmeg to taste, grated
– 3/4 cup(s) brown sugar, sifted
– 6 tablespoons of sugar
– 1 and 1/2 teaspoons of chemical yeast
– 1 1/2 teaspoon(s) of baking soda
CHRISTMAS CAKE DOUGH Ingredients (Liquids + nuts)
– 3 units of eggs
– 1 cup(s) oil + a little for greasing
– 1 1/2 cups carrot, peeled and finely grated.
– 3/4 cup(s) of chopped walnuts, to be incorporated into the dough. (or pecans)
SALT CARAMEL TOPING Ingredients:
– 3/4 cup(s) of sugar
– 3 tablespoons of water
– 90 ml of fresh cream
– 1 1/2 tablespoons unsalted butter, at room temperature.
– vanilla essence to taste
– 3/4 teaspoon(s) of salt
Ingredients TO DECORATE:
– walnuts to taste, whole. (or pecans)
PREPARATION:
- Separate the recipe ingredients and utensils.
- Store fresh cream in the refrigerator until ready to use.
- Preheat the oven to 180°C.
- Sift together all the dry ingredients except the white sugar, baking powder and bicarbonate of soda.
- Peel and grate the carrot on the fine side of the grater.
- Chop the walnuts to add to the dough. Leave it in pieces, being careful not to turn it into flour. Save some whole walnuts for decoration.
- Grease a 23cm springform pan for a whole recipe – 6 portions, and sprinkle with a little flour.
PREPARATION:
CHRISTMAS CAKE:
- In a blender, beat the egg(s) with the oil and sugar.
- Transfer the mixture into a bowl and add the remaining sifted dry ingredients.
- Gently mix the baking powder and baking soda so as not to compromise the consistency of the cake.
- Add the grated carrot and chopped walnuts. Mix well.
- Place the cake dough in the greased and floured pan.
- Bake in a preheated oven at 180°C for 35 minutes or until the cake is completely cooked. Cooking time may vary depending on the size of the cake you are preparing.
- Do the toothpick test to check if it is cooked: if it comes out dry the cake is ready.
CHRISTMAS CAKE:

- Remove from oven, let cool for 10 minutes.
- When it is cold, unmold.
SALT CARAMEL SYRUP (MAKE IT THE DAY OF SERVICE):
- Add the sugar and water to a pan and place over medium-high heat, taking care that it does not burn.
- Let it reach a caramelized color, stir from time to time, without touching, simply stirring the pan.
- Remove from the heat and add the cold fresh cream. At this point be careful because the mixture boils slightly.
- Return to low heat and cook for 1 minute, stirring until smooth.
- Remove from the heat again, add the butter at room temperature, stir to combine.
- Finally add the salt.
- Let it cool a little.
DECORATION: (on the day of service)
- If the caramel sauce is a little thick, place it in a bain-marie for a few minutes.
- Apply the syrup carefully, letting it run slightly down the sides. If desired, reserve some of the syrup to serve with the cake.
- Arrange the cake on the plate on which it will be served.
- Decorate with whole walnuts on top.
FINALIZATION AND ASSEMBLY:
- Serve the Christmas cake sliced ​​accompanied by a little more salted caramel sauce on the side (optional).
