Burnt coconut delight
Time: 1h (+2h in the fridge)
Performance: 8 servings
Difficulty: easy
Ingredients:
- 1 cup (tea) sugar
- 200 g of dried black plums
- 1 glass of coconut milk (200 ml)
- 1 can of condensed milk
- 200g freshly grated coconut
- 5 tablespoons of corn starch
- 1 cup (tea) water
Modpreparation:
- Bring the sugar, plums and water to the boil in a pan over a low heat.
- Cook, stirring occasionally, for 10 minutes or until syrup is syrupy and plums are soft.
- Remove from heat and set aside.
- Place the manjar ingredients in a pan and cook over medium heat, stirring until thickened.
- Place in a 26cm diameter mold with a hole in the centre, moisten it and leave in the fridge for 2 hours.
- Unmold and serve with the reserved plum syrup.
