Pasta with asparagus and pesto

Ingredients:

  • 1 pack of screw noodles (500 g)
  • Salt and olive oil to taste
  • 200 g of chopped asparagus

Sauce:

  • 3 cloves garlic, minced
  • 1 cup chopped walnuts
  • 1 cup (tea) olive oil
  • 1 cup chopped fresh basil
  • 1/2 cup (tea) water
  • 150 g of grated parmesan
  • Salt and black pepper to taste

Preparation method:

  1. In a pan, cook the pasta in plenty of salted water. Drain, drizzle with olive oil and set aside.
  2. Heat a pan with olive oil, add the asparagus, season with salt and brown for 2 minutes. Remove and reserve.
  3. For the sauce, place the garlic and walnuts in a blender. Tap quickly with the pulse button.
  4. Gradually add the olive oil, whisking until a thick sauce forms.
  5. Add the basil, water, grated parmesan, salt, pepper and beat quickly to combine.
  6. Arrange the cooked pasta and asparagus on a serving plate, pour the sauce over, mix delicately and then serve, decorating as desired.
