Ingredients:

  • 1 pack of Renata Wholemeal Cake Mix
  • 1 cup milk (tea)
  • 3 eggs
  • 6 tablespoons of Renata Superiore Extra Virgin Olive Oil
  • 1 teaspoon clove powder
  • 1 cup of Renata type 1 Traditional Soft Wheat Flour
  • 1/2 cup chopped apricots
  • 4 tablespoons chopped walnuts

Coverage

  • 4 cups (500 g) icing sugar
  • 1/2 cup milk or lemon juice
  • 1 teaspoon drops of lemon essence

Decoration

  • 1 teaspoon lemon zest or mint leaves (optional)
  • 1 small jar of maraschino cherries
  • 6 walnuts, cut in half

Preparation method:

  1. In a mixer, beat the dough ingredients for 5 minutes.
  2. In a bowl mix the RENATA flour with the apricots and walnuts, flouring them lightly. Add them to the mixture, mixing gently, without beating.
  3. Grease the pan as indicated on the package and bake following the oven time instructions. Let it cool before turning it out.
  4. In a bowl suitable for a bain-marie, mix the sugar and milk until you obtain a creamy consistency.
  5. Add the lemon and place in a bain-marie, stirring constantly until the sugar dissolves. Remove from heat and use when hot.
  6. Pour the fondant over the cold cake and decorate with walnut halves, mint leaves and cherries.
