Country mayonnaise

Ingredients:

  • 300 g diced cassava
  • 1 chicken breast cooked and cut into pieces
  • 1 can drained corn
  • 1 cup diced fried bacon
  • 3 hard boiled eggs
  • Salt and black pepper to taste
  • Parsley for sprinkling

Mayonnaise

  • 1 chopped hard boiled egg
  • 2/3 cup cold milk
  • Salt to taste

Preparation method:

  1. For the mayonnaise, place the egg, milk and salt in a blender.
  2. Turn the heat on and add the oil, little by little, slowly, until it thickens and becomes similar to mayonnaise, add more oil if necessary. Reserve in the refrigerator.
  3. Cook the cassava in hot water until al dente. Drain and place in a bowl.
  4. Add the shredded chicken, corn, bacon, 2 chopped eggs, reserved mayonnaise, season with salt and pepper and mix.
  5. Store in the refrigerator for 1 hour.
  6. Remove, transfer to a salad bowl, decorate with the remaining sliced ​​egg and sprinkle with parsley.
