Ingredients:

  • 1 piece of boneless ham (about 2 kg)
  • 2 cups of orange juice
  • 3 cloves garlic, minced
  • 1 onion chopped
  • 2 tablespoons honey
  • Salt and black pepper to taste
  • 1 cup (tea) water
  • 2 tablespoons butter
  • 300 g of spring onions cut in half
  • 1 tablespoon of sugar
  • Sliced ​​chives to decorate

Crust:

  • 4 tablespoons melted butter
  • 3 stale French bread, grated
  • 2 tablespoons grated parmesan

Preparation method:

  1. Place the shank in a bowl, add the orange juice, garlic, onion, honey, salt, pepper and water.
  2. Cover and leave to rest for 6 hours in the refrigerator, turning halfway through cooking.
  3. Place the ham in a baking dish, filter the marinade, pour it over the meat and cover with aluminum foil.
  4. Bake in a preheated medium oven for 1 hour and 30 minutes.
  5. Remove the aluminum foil and drain some of the marinade.
  6. Cover the piece of ham with the mixed crust ingredients, pressing to set, and return to the oven for another 30 minutes or until lightly browned.
  7. Separately, heat a pan with the butter until it melts, add the onion and fry over low heat for 5 minutes.
  8. Add the sugar and fry until caramelized.
  9. Remove the shank from the oven, transfer it to a serving plate and serve accompanied by the onion sprinkled with sliced ​​chives.
