BANANA PANCAKE (American) Ingredients:

– 3 pieces of large, ripe silver bananas. (or dwarf banana)

– 2 large eggs, beaten.

– 1/3 cup(s) gluten-free flour blend

– 1/2 teaspoon(s) of chemical yeast B

– coconut oil to taste to grease the pan. (or other option of your choice)

– ground cinnamon to taste (optional) B

Ingredients TO FINISH

– honey to taste (or agave syrup)

– banana to taste, sliced ​​(optional)

PREPARATION:

  1. The yield of this recipe is 4 – 6 small pancakes, 7 to 10 cm in diameter for every 2 portions.
  2. For this recipe I used a mixture of gluten-free flours purchased at the supermarket.
  3. Separate the recipe ingredients and utensils. Tip: use a pan with a thick bottom, place a grill over the heat so that the pancakes cook and become golden.

PREPARATION:

Banana pancakes – preparation of the dough:

  1. In a shallow dish or bowl, break the eggs, add the yeast and beat well.
  2. In another shallow plate or bowl, mash the bananas well with a fork until no large pieces remain.
  3. Mix in the mashed bananas and beaten eggs until well incorporated.
  4. Add the gluten-free flour mix and the cinnamon powder (optional) and mix well.

Banana pancakes – prepared in a pan:

  1. Heat a small non-stick pan, preferably with a thick bottom, over medium/low heat and grease it with coconut oil or another oil of your choice (see advice in the pre-preparation section).
  2. Pour a portion of dough (1 ladle), but do not roll it out, leave it 7 to 10 cm in diameter and thicker.
  3. Reduce the heat to low and cover.
  4. When the batter is golden brown underneath and bubbling on top, flip the pancake using a dessert plate or cutting board and return it to the pan.
  5. Cook for about 2 more minutes or enough to cook through and brown on the other side.
  6. Remove it from the pan and repeat the operation with the rest of the dough.

FINALIZATION AND ASSEMBLY:

  1. Serve to banana pancakes (American style) with side dish of your choice.
  2. Finish with agave syrup or honey.
