Cornbread
Time: 50 minutes (+1 hour rest)
Performance: 8 servings
Difficulty: easy
Ingredients:
- 1/2 cup oil (tea).
- 1 cup green corn with canned water
- 2 tablets of organic fresh yeast (30g)
- 2 tablespoons of sugar
- 1/2 tablespoon salt
- 1 cup (tea) water
- 2 eggs
- 1/2 cup (tea) cornmeal
- 2 1/2 cups (tea) wheat flour (approximately)
- Margarine for greasing
- Corn flour for dusting
Preparation method:
- Blend the oil, corn with canned water, yeast, sugar, salt, water and eggs in a blender.
- Pour it into a bowl, add the cornmeal and flour, little at a time, kneading until it no longer sticks to your hands.
- If necessary, add more flour.
- Cover with a cloth and leave to rest for 20 minutes.
- Divide the dough into 2 parts, form two elongated loaves and place them in 2 27cm x 12cm English cake tins, greased and dusted with corn flour.
- Cover and let rest for another 40 minutes.
- Make shallow cuts on the bread, sprinkle them with corn flour and place them in a preheated medium oven (180ยบ C) for 30 minutes or until cooked through and lightly browned.
- Remove from the oven, let cool and serve.
