Fennel and carrot salad: light, aromatic and healthy, with spices and a special dressing that enhances the flavor of fresh vegetables
A vegetable salad with a richly flavored sauce.

Ingredients for the salad
– 1 unit of fresh fennel, cut or grated (see pre-preparation)
– 1 carrot(s), cut or grated (see pre-preparation)
– 1 unit of finger-de-moça pepper, seedless, chopped
Sauce ingredients
– 2 teaspoons of mustard seeds
CD
– 2 teaspoons of coriander seeds CD
– 8 tablespoons of extra virgin olive oil
– 1 unit of lemon (juice)
– salt to taste
– pepper to taste w
Finishing ingredients
– coriander to taste, chopped
– 1/2 cup(s) peanut sherrem
– extra virgin olive oil to taste
PREPARATION:
1. Begin to flavor the olive oil in the sauce (see preparation).
2. Wash the carrot, peel it and cut it into thin slices, lengthwise. Then, cut each slice into thin, long strips like spaghetti. If you prefer, grate the carrot, also lengthwise, on the thick part of the grater. Set aside in a bowl.
3. Cut and remove the base of the bulb and the harder outer leaves of the fennel. Cut the bulb into thin slices crosswise or grate it on the thick side of the grater. Transfer to a bowl and immerse in sodium hypochlorite solution.
4. Wash, remove the seeds and chop the chilli pepper.
5. Wash, dry and chop the coriander leaves to finish.
PREPARATION:
Sauce (do this step before starting the pre-preparation):
1. Place the mustard and coriander seeds in a non-stick pan and brown them for about 30 seconds, just to release the aroma.
2. Turn off the heat, add the extra virgin olive oil and mix to blend the flavors.
3. Season with salt and pepper, transfer to a bowl and leave to cool.
4. Continue pre-preparation.
Fennel and carrot salad with spices:
1. Remove the fennel from the sodium hypochlorite solution, transfer it to a colander and rinse well. Drain the fennel and dry it with absorbent paper.
2. Place the fennel in the bowl together with the carrot cut into strips or grated and mix.
3. Add the lemon juice to the cold sauce and whisk to emulsify. Check the salt and pepper.
4. Drizzle the salad with the dressing and mix well so the flavors blend.
FINALIZATION AND ASSEMBLY:
1. Place the salad in a salad bowl or, if you prefer, distribute it among the plates.
2. Top with chopped coriander, peanut sherry and drizzle with a little more extra virgin olive oil.
