Classic vinaigrette recipe: a versatile and tasty sauce that pairs perfectly with barbecue, salad and feijoada




Vinaigrette: the most famous sauce to accompany meats and barbecues, feijoada and salads.

Recipe for 4 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

VINEGAR Ingredients

– 1 unit of tomato, without seeds, cut into cubes

– 1/2 onion(s), diced

– 1 unit of finger-de-moça pepper, seedless, chopped

– parsley to taste (leaves)

– 2 tablespoons of water, filtered

– 4 tablespoons of white wine vinegar

– 2 tablespoons lemon (juice)

– 4 tablespoons of extra virgin olive oil

– salt to taste

PREPARATION:

  1. Peel and cut the onion into cubes.
  2. Wash the tomato, remove the seeds and cut it into cubes.
  3. Wash, remove the seeds and chop the chilli.
  4. Wash, dry and chop the parsley and set it aside on absorbent paper.

PREPARATION:

Vinaigrette:

  1. In a bowl to bring to the table to serve, arrange the tomato cubes, chopped onion, chilli pepper and parsley.
  2. With the mixer, beat the water (see quantities in the ingredients), the vinegar, the lemon juice and the salt until everything is well mixed.
  3. If you don’t have a mixer, put it in a closed pan and blend everything well.
  4. Add the olive oil to the mixer mixture and beat, on low speed, to emulsify, or, in the pot, add the olive oil and shake again.
  5. Drizzle the vegetables in the bowl with the sauce, mix well and season with salt.

FINALIZATION AND ASSEMBLY:

  1. Take the vinaigrette on the table to accompany your dishes.
