Ingredients for roast potatoes

  • 1 medium onion, diced
  • 1 crushed clove of garlic
  • 2 tablespoons of tomato paste
  • 1.4 kg of clean lizard (piece)
  • 2 cubes of beef broth
  • 2 cups of water (tea)

  • 4 cups of diced potatoes
  • 2 cups of broccoli in bunches
  • 2 tablespoons of oil
  • 2 tablespoons of butter
  • 4 whole garlic cloves, unpeeled
  • Salt and black pepper to taste

Method of preparation

Heat the oil in a large large skillet over high heat and brown the lizard. Remove and reserve. Lower the heat to medium and in a pressure cooker, saute the onion and garlic for 3 minutes, add the extract and saute for 1 minute. Add the meat and the meat broth dissolved in the water. Cover and cook for 40 minutes, after the pressure has started. Switch off, wait for the pressure to naturally release and open the pan. If the meat is still not tender, return the pan to medium heat, uncovered, and cook until the meat is tender and the sauce has reduced.

In another pot, cook the potatoes and broccoli in salted water until tender. Drain, heat a pan, on the fire, with the oil and butter. Add the potato, garlic and sauté for 10 minutes over low heat, stirring occasionally or until golden brown. Add the broccoli, salt and pepper and sauté for 2 minutes. Turn off the heat and serve with the sliced ​​meat seasoned with the meat sauce.
