cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
SEQUILHOS ingredients
– 130 g unsalted butter, at room temperature + a little to grease the baking dish(s)
– 1/2 cup(s) of sugar
– 1 egg unit, yolk(s) only
– 2 cups cornstarch, added little by little + a little for dusting
– 6 tablespoons unsweetened shredded coconut (optional)
– salt to taste (pinch)
PREPARATION:
- 1 entire recipe (4 servings) yields approximately 48 cookies measured with 1 heaping teaspoon (9 g each).
- Remove the butter from the refrigerator to use at room temperature.
- Separate all ingredients and utensils for the recipe.
- Grease the pan(s) with butter and sprinkle with cornstarch.
- Separate the yolks and reserve the whites for other preparations.
- Preheat the oven to 180°C.
PREPARATION:
Sequilhos – preparation of the dough:
- Place the butter and sugar in a bowl and mix well with a spatula.
- Add the egg yolk(s) and mix again.
- Add a pinch of salt and gradually add the cornstarch, kneading with your fingertips until you obtain a smooth dough that does not stick to your hands.
- Finally add the grated coconut (optional) and mix well.
Sequilhos – modeling:
- Portion the dough (about 9 g each – 1 heaped teaspoon) and shape into balls, pressing so that they are very smooth.
- Arrange them on one or more greased and dusted baking trays, leaving a small space between them.
- Press gently with a fork to flatten the balls and leave marks.
Sequilhos – without wheat:
- Place the sequilhos in the oven preheated to 180ºC and cook for about 20 minutes, until they are dry and golden.
- Remove from the oven and leave to cool on the tray(s): they will only solidify once they are cold.
FINALIZATION AND ASSEMBLY:
- Arrange the sequilhos on a plate or small bowl to serve or, if you prefer, store them in an airtight container for about 30 days.
