Pasta in a pot with minced meat and tomato sauce

Ingredients

  • 2 tablespoons of olive oil
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 500 g of minced meat
  • Chopped parsley, salt and ground black pepper to taste
  • 1 teaspoon oregano or Italian seasoning
  • 400 g of tomato chopped naked
  • 2 tablespoons of tomato paste
  • 3 cups of hot water
  • 250 g of elbow macaroni

Preparation method

Heat the olive oil in a large skillet over medium heat and sauté the onion until translucent. Add the garlic and sauté for a few more seconds. Add the minced meat and cook until it loses all the water and begins to brown. Season with salt, black pepper and oregano. Add the peeled tomatoes, tomato paste and mix well.

Let cook for 2 to 3 minutes to develop the flavor. Add the hot water and pasta directly to the pan. Mix well, partially cover and cook over medium heat, stirring occasionally to prevent sticking. When the pasta is al dente and the sauce is thicker, turn off the heat. Season with salt and sprinkle with parsley. Serve then.

Quinoa with chicken and spinach in a pan

Ingredients

  • 1 cup quinoa tea
  • 300 g of chicken breast dice
  • 2 tablespoons of olive oil
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 2 cups of hot water
  • 1 cup chopped spinach leaves
  • 1 grated carrot
  • Salt and ground black pepper to taste
  • Juice of 1/2 lemon

Preparation method

In a large skillet, heat the olive oil over medium heat and brown the chicken with salt and pepper. Stir until well cooked on the outside and starting to brown. Add the onion and garlic and sauté for a few minutes until golden and fragrant. Add the quinoa, mix well and add the hot water. Reduce the heat, cover the pan and cook for about 15 minutes, until the quinoa is soft and the liquid has been absorbed. When the quinoa is almost ready, add the spinach and carrots. Stir and cover again for 3-5 minutes, until the spinach wilts. Season with salt and sprinkle with lemon juice. Serve then.

Creamy chicken in a pot

Creamy chicken in a pot

Ingredients

  • 2 tablespoons of olive oil
  • 600 g of chicken breast cut into medium cubes
  • Chopped green chilli, salt and ground black pepper to taste
  • 1 teaspoon sweet paprika
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 1 tablespoon ketchup

Preparation method

In a large skillet, heat the olive oil over medium heat and add the chicken cubes. Season with salt, black pepper and paprika. Brown it well on all sides, without stirring too much, until it forms a light crust. Add the onion and garlic, stirring until they are golden and release their aroma. Scrape the bottom of the pan with a wooden spoon to incorporate the chicken flavor.

Add the tomato sauce and water. Mix well, partially cover the pan and cook for about 10 minutes, until the chicken is tender and the sauce is thicker. Lower the heat and add the cream and ketchup. Cook for another 2 minutes, just to heat it through, without letting it boil to prevent the sauce from accumulating. Sprinkle with green chiles and serve immediately.

Rice with sausage with peppers and peas in a pan

Ingredients

  • 2 tablespoons of oil
  • 300 g of Calabrian sausage cut into thin slices
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 1 red pepper cut into cubes
  • 1 yellow pepper cut into cubes
  • 1 1/2 cups white rice
  • 3 cups of hot water
  • 1/2 cup fresh peas
  • Salt and ground black pepper to taste

Preparation method

In a large skillet, heat the oil over medium heat and add the sausage slices. Brown it well, stirring occasionally to release the natural fat and form the basic flavor of the dish. Add the onion and garlic, sautéing until golden and fragrant. Add the peppers and brown them for another 2 minutes, mixing well with the sausage.

Add the rice and mix, leaving it to cook for 1 or 2 minutes to absorb the flavour. Then pour in the hot water, season with salt and black pepper and partially cover the pan. When the rice is almost dry (with a few minutes remaining until fully cooked), add the peas and mix lightly. Cover again and cook until the water dries up completely. Turn off the heat, fluff the rice with a fork and then serve.
