1. Boiling water does not damage the coffee

First of all, we must remember that the water must reach a temperature of 100Âş C to start boiling (evaporating), right? Wrong! This is because we are not considering the fact that atmospheric (atmospheric) pressure affects this equation and the result is that the higher your position relative to sea level, the lower the temperature needed to boil the water.
For example, in a higher city like SĂŁo Paulo, the boiling point of water is 97Âş, while on an even higher peak like Everest this value drops to as much as 72ÂşC!
In light of this, it is interesting to add that the temperature of the water to create the pressure to make an espresso is 90ÂşC, not far from the conventional 100 degrees. However, this temperature does not eliminate the flavors or properties of the drink.

In this way, prolonged contact with hot water allows the caffeine to be extracted in greater quantities. Also, since the dose of espresso is usually much lower than that of brewed coffee, in the second option the caffeine is consumed in greater quantities.

Where did the idea of ​​making unfiltered coffee come from?
