or cheese bread Is considered gastronomic cultural heritage of Brazilso much so that there is even a commemorative date in his name, in August 17th. To take advantage of this date, we decided to set ourselves a challenge: to create a delicious cheese and chocolate bread recipe.
Recipe: Cheese bread with chocolate
Discover the ingredients we used during the recipe:

170 g 40% cocoa chocolate (two 85 g bars)

150 g Whole Milk Cream (half a can)

1 (full) jar of finely grated mozzarella
-
1 can of sweet sprinkle
-
85 g of 60% cocoa chocolate (1 bar) – optional
Note that when testing we use the can of cream as a meter. This recipe produces approx. 12 sandwiches.
And before the miners come to curse us (with good reason), let’s already make it clear that this recipe is an adaptation of the cheese cookie (a simplified version of the cheese bread). The name “chocolate and cheese bread” is for reference only.
Break up the chocolate and put it in the microwave in rounds of 30 seconds until completely melted. Once done, set aside until it cools.

Meanwhile, put the oven to heat up to 200ºC. At this point, shake the can of cream well to mix the whey with the dough. Only then add half a can to a bowl, then the chocolate and mix until a homogeneous mixture (ganache) is formed.

Then grate the mozzarella to the smallest possible size and add it to the mixture. Now it’s up to the sweet sprinkling, then mix well until you get a homogeneous mixture.

Then grease the mold and distribute the dough in the spaces with the help of two spoons. This dough usually rolls out, so you’ll want to use molds that hold the dough (you can use cupcake molds, for example).

Finally, take the shape with the dough in a preheated oven at 200ºC, leave there for 5 minutes and only then change the temperature to 180ºC, then bake for 30 minutes.

As soon as it is baked, wait for it to cool, otherwise it will be too soft. Finally, melt the 80% cocoa chocolate bar and use it as a syrup; it’s really worth it !!

Understand the origin of cheese bread
Little is known about when the first batch of cheese rolls came out of the oven. However, many believe it originated in the state of Minas Gerais during the time of imperial Brazil.
The fact is that, at the time, wheat flour was a product not very present in the country, since its marketing spread here only in the twentieth century.
Therefore, cassava starch appears as an ideal alternative, since its origin is from cassava, which was already a very characteristic food of our country, composed mainly of indigenous peoples. A salute to cassava!
At the beginning, the cheese used was that which had hardened overnight on the farms, considered leftovers. Soon, the useful and the pleasant came together and the idea of mixing this grated cheese with flour gave rise to the much loved cheese bread.
Over time, the delicacy gained even more space in the hearts and culture of Brazilians, until it got its vegan version and its highlight date.
