Ingredients:
- 3 tablespoons of butter
- 1/2 chopped onion
- 2 minced garlic cloves
- 3 cups rice (washed and drained)
- 1 cup peas (frozen)
- 1 cup cooked and shredded chicken
- 1/2 cup cashews (chopped)
- 1 cup dried apricots (chopped)
- 1 glass of dry white wine
- 5 1/2 cups (tea) warm water
- salt to taste
- Tufts of curly parsley and cherry tomatoes for garnish
Method of preparation:
- Heat a pan with the butter over medium heat and sauté the onion and garlic for 3 minutes.
- Add the rice and sauté for 3 minutes.
- Add the peas, chicken, chestnuts, apricots and sauté for 2 minutes.
- Add the wine and water, add salt and cook with a lid on until the water has almost dried up.
- Lower the heat, cover the pan and cook until the water dries up completely and the rice is softened.
- Turn it off and let it cool down.
- Spread the rice into a greased hole 30cm in diameter in the centre, wringing well.
- Turn out onto a serving plate, garnish with parsley, cherry tomatoes and serve immediately.
